Our Process
The journey begins with the cultivation of agave plants, the heart our mezcal. Unlike tequila, primarily made from blue agave, mezcal can be crafted from over 30 different agave species. At LNK Mezcal, we use agave espadín, cultivated in the soils of Oaxaca.
Once mature, the agave plants are harvested by skilled jimadores, who carefully cut away the leaves to reveal the piñas (agave hearts). Only the finest piñas are hand-selected to continue the process. These piñas are at the core of our mezcal’s distinctive flavor.
Once harvested, piñas are transferred to an underground pit lined with stones covered in agave leaves. A fire is built at the base of the pit then agave is carefully stacked atop to cook over several days. Its during this step that mezcal gets its smoky characteristics.
After roasting, the piñas are milled to extract their rich juices from the agave fibers. These fibers are then used reused to insulate more agave cooking.
